Ingredients

16 oz lean ground turkey breast

1 TBS olive oil

12 tsp salt

14 tsp pepper

14 tsp garlic powder

12 tsp Italian seasoning

12 no-boil lasagna noodles

30 oz fat free ricotta cheese

8 oz chopped frozen spinach, drained and pat dry with paper towels

1 TBS pesto

2 TBS chopped fresh basil

214 cups low sodium tomato sauce

34 cup grated Parmesan cheese

34 cup part-skim shredded mozzarella cheese

Directions

1. Heat oven to 350 degrees F. Spray 9x13-inch pan with non-stick cooking spray.

2. To cook meat, heat pan to medium-high and add 1 TBS olive oil. Add ground turkey, salt, pepper, garlic powder, and Italian seasoning, and cook through until lightly browned. Turn off heat and set aside.

3. To make ricotta mixture, strain frozen spinach and press with paper towels to remove excess water. Mix strained spinach, ricotta, pesto, and 1 TBS fresh basil until combined.

4. Place 4 lasagna noodles across bottom of pan.

5. Spread 34 cup tomato sauce to evenly cover noodles.

6. Spread half the ground turkey over the tomato sauce.

7. Spread 1.5 cups of ricotta mixture over ground turkey.

8. Top ricotta mixture with 14 cup shredded mozzarella and 14 cup shredded Parmesan.

9. Repeat steps 4-6.

10. Repeat steps 4-6 again, this last time omitting the ground turkey.

11. Cover pan with aluminum foil and bake in oven for 30 minutes. Remove foil and continue baking for another 15 minutes.

12. Let lasagna cool and set for about 15 minutes. Top with 1 TBS shredded fresh basil before serving.
