Ingredients

Nonstick cooking spray

1 tbsp canola oil, divided

1 lb turkey breast cutlets

12 cup minced onion

2 garlic cloves, minced

2 tsp grated fresh ginger

34 cup unsweetened apple juice

1 cup chopped apple

14 cup raisins

20 dried apricots, chopped

14 tsp salt

1 tsp cornstarch

14 cup water

1 cup brown rice, cooked according to directions without salt or fat

Directions

1. Spray a large skillet with nonstick cooking spray. Place the skillet over medium-high heat and add 12 tbsp canola oil. When oil is hot, add the turkey cutlets and cook 5 to 6 minutes on each side or until cooked through.

2. Remove turkey cutlets from the skillet. Set aside and keep warm.

3. Add onion, garlic, and remaining 12 tbsp canola oil to the skillet. Sauté for 1 to 2 minutes.

4. Add ginger, apple juice, apple, raisins, apricots, and salt. Bring to a boil. Cover. Reduce heat and simmer for 3 to 4 minutes.

5. In a small bowl, combine cornstarch and water and add to the skillet. Stir 1 minute to thicken.

6. Add the turkey cutlets back to the skillet to heat through.

7. Spoon sauce over turkey cutlets and serve with hot rice.
