Ingredients

Nonstick cooking spray

1 tbsp olive oil

4 sliced green onions, tops included

4 minced garlic cloves

2 cups sliced mushrooms

3 cups thinly sliced zucchini

14 cup water

1 (14 12-oz) can diced Italian tomatoes

1 (13 34-oz) can water-packed artichoke hearts, drained, sliced

1 tsp onion powder

1 tsp oregano

1 tsp salt-free Mrs. Dash† Original Blend Seasoning

4 oz (8 tbsp) reduced-fat cream cheese

8 oz whole-wheat penne pasta, cooked according to directions without salt or fat

14 cup chopped fresh parsley

Directions

1. Spray a large skillet with nonstick cooking spray. Place the skillet over medium-high heat and add olive oil. When hot, add onions and garlic and sauté for 1 to 2 minutes.

2. Add mushrooms and sauté for 2 minutes.

3. Add zucchini and water. Cover. Cook for 3 to 4 minutes or until zucchini is tender.

4. Add the tomatoes, artichoke hearts, onion powder, oregano, salt-free seasoning, and cream cheese. Stir for 4 to 5 minutes or until cream cheese melts.

5. Add cooked pasta and stir. Top with chopped parsley.
