Ingredients

3 tbsp peanut butter, smooth, without salt

14 cup reduced-sodium soy sauce

2 tbsp rice vinegar

12 cup reduced-sodium chicken broth

2 tbsp brown sugar

2 tbsp water

2 tsp cornstarch

2 tsp canola oil, divided

1 lb chicken breasts, boneless, skinless, cut into 1-inch pieces

4 garlic cloves, minced

6 green onions, sliced, tops included

1 cup sliced red bell pepper

12 cup sliced celery

6 oz linguine pasta, broken into

1 cup chopped fresh cilantro

14 cup dry-roasted peanuts, unsalted

Directions

1. In a medium-size bowl, combine peanut butter, soy sauce, vinegar, broth, brown sugar, water, and cornstarch. Mix with a wire whisk and set aside.

2. Spray a large skillet with nonstick cooking spray. Place the skillet over medium-high heat and add 1 tsp canola oil. When oil is hot, add chicken pieces. Cook 4 to 5 minutes or until cooked through.

3. Transfer chicken to a plate and set aside. Keep warm.

4. Add remaining 1 tsp canola oil to the skillet. When oil is hot, add garlic, onions, bell pepper, and celery. Stir-fry 2 to 3 minutes.

5. Add the cooked chicken pieces back to the skillet with the prepared peanut butter mixture. Stir with a wire whisk 1 to 2 minutes to thicken and heat through.

6. In a large bowl, combine and toss the hot pasta with the chicken mixture and the cilantro. Top each serving with peanuts.

Makes 4 servings.
