1. Spray a large skillet with nonstick cooking spray. Place the skillet over medium-high heat and add canola oil. When hot, add halibut fillets. Cook for 4 to 5 minutes on each side or until cooked through.
2. Meanwhile, in a large bowl combine tomato, onions, celery, artichoke hearts, dill, mayonnaise, lemon juice, and salt. Mix well.
3. Gently mix in the avocado and serve over halibut fillets with hot rice.
