Ingredients

Recipe for Mixed Green Salad

Nonstick cooking spray

1 tsp canola oil

1 12 lb (four 6-oz) halibut fillets

1 chopped tomato

2 chopped green onions

12 cup chopped celery

1 (13 3/4-oz) can artichoke hearts, water-packed, drained, sliced

1 tsp dried dill

2 tbsp low-fat mayonnaise

2 tbsp lemon juice

12 tsp salt

1 avocado, diced

Directions

1. Prepare Mixed Green Salad recipe according to directions.

2. Spray a large skillet with nonstick cooking spray. Place the skillet over medium-high heat and add canola oil. When hot, add halibut fillets. Cook for 4 to 5 minutes on each side or until cooked through.

3. Meanwhile, in a large bowl combine tomato, onions, celery, artichoke hearts, dill, mayonnaise, lemon juice, and salt. Mix well.

4. Gently mix in the avocado and serve over halibut fillets. Serve the mixed green salad on the side.

Makes 4 servings.
