Ingredients

Recipe for Tomato Cucumber Salad

Nonstick cooking spray

1 12 lb cod fillets

1 (14 12 -oz) can diced tomatoes, no salt added

2 garlic cloves, minced

1 tbsp olive oil

1 tbsp lemon juice

12 tsp salt-free Mrs. Dash† Lemon Pepper Seasoning Blend

12 tsp dried basil

12 cup sliced black olives

12 cup sliced green pimento-stuffed olives

12 cup crumbled feta cheese

12 cup chopped fresh parsley, divided

Directions

Preheat oven to 400°F.

1. Prepare Tomato Cucumber Salad recipe according to directions.

2. Spray a 9 x13 baking dish with nonstick cooking spray. Place cod fillets in the dish.

3. Top with tomatoes, garlic, olive oil, lemon juice, salt-free seasoning, basil, olives, cheese, and 14 cup parsley.

4. Bake 20 minutes or until fish flakes easily with a fork.

5. Serve baked cod with tomato cucumber salad and top with remaining 14 cup parsley.
