Ingredients

Nonstick cooking spray

1 lb halibut fillets

2 tbsp olive oil

1 tbsp lemon juice

1 (14 12-oz) can diced tomatoes, no salt added

10 Kalamata olives, pitted, sliced in half

12 tsp oregano

12 tsp onion powder

12 tsp salt-free Mrs. Dash† Lemon Pepper Seasoning Blend

14 tsp salt

1 (13 34-oz) can artichoke hearts, water packed, drained and sliced

1 cup brown rice, cooked according to directions without salt or fat

14 cup Parmesan cheese

14 cup chopped fresh parsley

Directions

Preheat oven to 350°F.

1. Spray a medium-size baking dish with nonstick cooking spray. Place halibut fillets in the dish. Drizzle fillets with olive oil and lemon juice. Bake uncovered for 10 minutes.

2. In a large saucepan, combine tomatoes, olives, oregano, onion powder, salt-free seasoning, and salt.

3. Add artichoke hearts and remove from heat. Pour mixture over fillets and bake 15 to 20 minutes or until fish flakes easily with a fork.

4. Serve fillets with sauce over hot rice. Top with cheese and parsley.
