Ingredients

Recipe for Seasoned Mashed Potatoes

Nonstick cooking spray

1 lb halibut fillet, cut into 4 portions

3 tbsp honey mustard

3 tbsp low-fat mayonnaise

2 tsp sugar

2 tsp red wine vinegar

4 green onions, sliced with tops included

Directions

Preheat oven to 400°F.

1. Prepare Seasoned Mashed Potato recipe according to directions.

2. Meanwhile, spray a medium-size baking dish with nonstick cooking spray. Place halibut fillets close together in the baking dish. Set aside.

3. In a small bowl combine the honey mustard, mayonnaise, sugar, vinegar, and onions. Spoon over the halibut fillets.

4. Cover the baking dish and bake 25 to 30 minutes or until fish flakes easily with a fork.

5. Serve halibut fillets with seasoned mashed potatoes.

Makes 4 servings.
