Ingredients

Nonstick cooking spray

1 tbsp olive oil

12 cup finely chopped onion

4 garlic cloves, minced

3 cups sliced mushrooms

12 tsp sage

12 tsp oregano

12 tsp salt-free Mrs. Dash† Lemon Pepper Seasoning Blend

1 tsp onion powder

1 12 cups nonfat ricotta cheese

2 egg whites

8 lasagna noodles, cooked according to directions without salt or fat

1 12 cups nonfat or 1% milk

14 cup flour

1 12 cups vegetable broth

14 tsp salt

13 cup Parmesan cheese

1 tbsp dried parsley

12 cup chopped red bell pepper

Directions

Preheat oven to 350°F.

1. Spray a large skillet with nonstick cooking spray. Place the skillet over medium-high heat and add olive oil. When oil is hot, add onion and garlic. Sauté 1 to 2 minutes.

2. Add mushrooms and sauté 2 minutes or until soft. Remove from heat and add sage, oregano, salt-free seasoning, onion powder, ricotta cheese, and egg whites. Mix well and set aside.

3. Lay out cooked lasagna noodles and spoon mushroom mixture down the center of each noodle. Spray a 9 x 13 baking dish with nonstick cooking spray. Roll up and lay the noodles seam side down in the dish. Set aside.

4. In a small bowl, combine milk and flour and mix with a wire whisk. Pour into a large saucepan over medium-high heat and add broth, salt, Parmesan cheese, and parsley. Cook 2 to 3 minutes stirring with a wire whisk to thicken slightly. Remove from heat and pour over lasagna roll-ups in baking dish.

5. Top with bell pepper. Bake uncovered for 30 minutes.
