Ingredients

1 lb snapper fillets, cut into 4 pieces

Nonstick cooking spray

1 cup orange juice, divided

2 tsp cornstarch

13 cup low-sugar orange marmalade

1 cup diced fresh mango

1 oz (14 cup) slivered, blanched almonds

1 cup brown rice, cooked according to directions without salt or fat

Directions

Preheat oven to 375°F.

1. Spray a medium-size baking dish with nonstick cooking spray. Place snapper fillets in the dish.

2. Pour 14 cup orange juice over fillets. Cover. Bake for 20 to 25 minutes or until fish flakes easily with fork.

3. Meanwhile, in a small bowl combine the remaining 34 cup orange juice and cornstarch.

4. In a small saucepan over medium heat, add orange juice mixture, marmalade, and diced mango. Stir and cook 3 to 4 minutes to thicken. Set aside. Keep warm.

5. Remove the snapper fillets from baking dish with a slotted spoon. Serve the orange-mango sauce over the fillets and top with almonds. Serve with hot rice.
