Preheat oven to 400°F.
1. Spray a medium-size baking dish with nonstick cooking spray. Set aside.
2. In a large bowl combine the diced yams, onion, olive oil, salt, and parsley. Mix well.
3. Pour mixture into the baking dish. Cover. Bake for 30 minutes.
4. Uncover. Bake for 15 more minutes.
