Ingredients

Nonstick cooking spray

12 lb ground beef (10% fat)

1 cup chopped onion

12 cup chopped red bell pepper

12 cup chopped green bell pepper

12 cup frozen, whole-kernel corn

1 (15-oz) can low-sodium black beans, drained

1 tsp onion powder

34 tsp chili powder

14 tsp salt

12 taco shells, heated

2 chopped tomatoes

14 cup shredded, reduced-fat mild cheddar cheese

14 cup salsa

2 cups shredded lettuce

1 12 cups carrot sticks

Directions

1. Spray a large skillet with nonstick cooking spray. Place the skillet over medium-high heat and add ground beef, onion, and peppers. Cook 5 to 8 minutes or until meat is cooked through.

2. Add corn and cook 2 to 3 minutes. Add beans, onion powder, chili powder, and salt. Stir and cook 2 to 3 minutes to heat through.

3. Fill the taco shells with the beef mixture and top with tomatoes, cheese, salsa, and lettuce. Add carrot sticks on the side.

Makes 4 servings.
