Ingredients

1 cup frozen, whole-kernel corn

14 cup water

12 (15-oz) can low-sodium black beans, drained

12 cup chopped green bell pepper

12 cup chopped red bell pepper

13 cup chopped red onion

2 tbsp salsa

14 cup chopped cilantro

2 tbsp lime juice

12 tsp cumin

12 tsp salt-free Mrs. Dash† Lemon Pepper Seasoning Blend

Directions

1. In a small saucepan bring the corn and water to a boil. Cook for 1 minute. Remove from heat. Drain water and set aside to cool to room temperature.

2. In a large bowl combine the black beans, peppers, onion, salsa, cilantro, lime juice, cumin, and salt-free seasoning.

3. Add the corn to the bean mixture and mix well.
