Ingredients

2 (8-oz) cans tomato sauce, no salt added

14 tsp chili powder

14 tsp cumin

1 tsp onion powder

1 12 (15-oz) cans low-sodium black beans, drained

14 cup salsa

Nonstick cooking spray

8 corn tortillas

12 cup shredded, reduced-fat mild cheddar cheese

12 cup low-fat sour cream

14 cup chopped red onion

2 chopped tomatoes

14 cup chopped cilantro

Directions

Preheat oven to 375°F.

1. In a small bowl combine the tomato sauce, chili powder, cumin, and onion powder. Mix well. Set aside.

2. In a separate bowl combine beans and salsa. Set aside.

3. Spray a 9 x13 inch baking dish with nonstick cooking spray.

4. To soften tortillas, heat them all together for 1 minute in a microwave.

5. Spoon a portion of the bean mixture on each tortilla, roll it up, and place each tortilla seam-side down in the baking dish.

6. Pour the tomato sauce mixture over the tortillas.

7. Spread the shredded cheese on top and bake uncovered for 25 to 30 minutes.

8. Top each serving with sour cream, onion, tomatoes, and cilantro.

Makes 4 servings.
