Ingredients

Recipe for Quick Brown Rice Pilaf

6 tbsp lemon juice

1 tsp lemon zest

2 tsp sugar

3 tbsp low-fat mayonnaise

Sour cream

1 12 tsp dried dill

1 cup diced cucumber

Nonstick cooking spray

1 lb (four 4-oz) skinless salmon fillets, 1-inch thick

1 tsp salt-free Mrs. Dash† Lemon Pepper Seasoning Blend

Directions

1. Prepare Quick Brown Rice Pilaf recipe according to directions.

2. In a small bowl, combine lemon juice, lemon zest, sugar, mayonnaise, sour cream, dill, and cucumber. Mix well and set aside.

3. Spray broiler pan with nonstick cooking spray. Place fillets in the pan and sprinkle with salt-free seasoning on each side.

4. Broil 5 minutes per side, 5 to 6 inches from the heat source.

5. Serve salmon topped with lemon-dill sauce and quick brown rice pilaf.
