Ingredients

2 cups diced pineapple (14-inch pieces)

12 cup diced red bell pepper

12 cup diced yellow bell pepper

12 cup diced green bell pepper

12 cup diced red onion

3 tbsp lime juice

34 cup salsa

1 tbsp honey

14 cup chopped fresh cilantro

1 12 lb (four 6-oz) skinless salmon fillets, 1-inch thick

Nonstick cooking spray

1 tsp salt-free Mrs. Dash† Lemon Pepper Seasoning Blend

1 cup brown rice, cooked according to directions without salt or fat

Directions

1. In a large bowl, combine pineapple, bell peppers, onion, lime juice, salsa, honey, and cilantro. Mix well. Set aside.

2. Spray broiler pan with nonstick cooking spray. Place salmon fillets in the pan and sprinkle with salt-free seasoning on each side.

3. Broil 5 minutes per side, 5 to 6 inches from the heat source.

4. Top fillets with pineapple salsa and serve with hot rice.
