Ingredients

2 cups 1% or nonfat milk

14 cup flour

1 tsp onion powder

1 tsp salt-free Mrs. Dash† Lemon Pepper Seasoning Blend, divided

Nonstick cooking spray

1 tsp olive oil

12 cup diced onion

4 garlic cloves, minced

1 (10-oz) package frozen chopped spinach, thawed and drained

4 tbsp (2 oz) reduced-fat cream cheese

1 lb (four 4-oz) skinless salmon fillets, 1-inch thick

8 oz spinach fettuccine pasta, cooked according to directions without salt or fat

14 cup Parmesan cheese

Directions

1. In a small bowl, combine milk, flour, onion powder, and 12 tsp salt-free seasoning. Mix well. Set aside.

2. Spray a large skillet with nonstick cooking spray. Place the skillet over medium-high heat and add olive oil. When oil is hot, add onion and garlic. Sauté 1 minute.

3. Squeeze thawed spinach well to remove any excess liquid and add to skillet.

4. Add prepared milk mixture to skillet. Stir 2 to 3 minutes or until thickened.

5. Add cream cheese and stir until melted. Cover. Remove from heat. Set aside.

6. Spray broiler pan with nonstick cooking spray. Place salmon fillets in the pan and sprinkle with salt-free seasoning on each side.

7. Broil 5 minutes per side, 5 to 6 inches from the heat source.

8. Serve spinach sauce over fillets with hot pasta. Top with cheese.
