Ingredients

Recipe for Garden Spinach Salad

14 cup low-fat mayonnaise

12 cup low-fat sour cream

14 cup minced red bell pepper

1 tsp dried dill

1 lb (four 4-oz) skinless salmon fillets, 1 inch thick

Nonstick cooking spray

1 tsp salt-free Mrs. Dash† Lemon Pepper Seasoning Blend

1 tsp olive oil

6 sliced green onions, tops included

2 cups thinly sliced carrots

2 cups broccoli florets, sliced in half

2 cups cauliflower florets, sliced in half

14 cup water

12 tsp salt

14 cup chopped fresh parsley

1 lemon, cut into 8 wedges

Directions

1. Prepare Garden Spinach Salad recipe according to directions.

2. In a small bowl combine mayonnaise, sour cream, pepper, and dill. Set aside.

3. Spray a broiler pan with nonstick cooking spray. Place fillets on pan and sprinkle with salt-free seasoning on each side.

4. Broil 5 minutes per side, 5 to 6 inches from the heat source.

5. Spray a large skillet with nonstick cooking spray. Place over medium-high heat and add olive oil. When hot, add onions. Sauté for 1 to 2 minutes.

6. Add carrots, broccoli, cauliflower, and water. Cover. Cook 4 to 5 minutes or until vegetables are tender.

7. Add salt and parsley and toss to mix well.

8. Top salmon with prepared dill topping and serve with vegetable mixture and lemon wedges. Serve garden spinach salad on the side.
