Ingredients

2 cups instant brown rice, cooked according to directions without salt or fat

2 cups (10 oz) cooked, diced chicken breast

12 cup low-fat mayonnaise

1 tbsp lemon juice

1 tsp lemon zest

1 tsp salt-free Mrs. Dash† Lemon Pepper Seasoning Blend

8 green onions, sliced, tops included

12 cup chopped celery

12 cup chopped red bell pepper

13 cup sliced black olives

12 cherry tomatoes, sliced in half

8 cups salad greens

1 cup carrot sticks

Directions

1. Prepare instant brown rice according to directions and let cool to room temperature.

2. In a large bowl, combine cooked chicken pieces, mayonnaise, lemon juice, lemon zest, salt-free seasoning, onions, celery, bell pepper, olives, and tomatoes.

3. Add cooked rice and toss to mix well.

4. Divide salad greens onto 4 dinner plates and top with chicken salad. Add carrots sticks on the side.
