Ingredients

2 oz pine nuts

Nonstick cooking spray

1 tsp olive oil

2 garlic cloves, minced

12 cup chopped onion

1 cup chopped red bell pepper

2 cups sliced mushrooms

2 cups butternut squash, peeled, cut into 12-inch pieces

1 cup sliced zucchini

1 (14 12-oz) can diced tomatoes, no salt added

12 cup water

1 (1334-oz) can artichoke hearts, water packed, sliced

2 tbsp white cooking wine

2 tsp basil

1 tsp salt-free Mrs. Dash† Lemon Pepper Seasoning Blend

12 tsp salt

4 cups chopped Swiss chard

8 oz whole-wheat fettuccine pasta cooked according to directions without salt or fat

Directions

1. In a small skillet, over medium-low heat, toast pine nuts for 4 to 6 minutes, stirring often. Set aside.

2. Spray a large skillet with nonstick cooking spray. Place the skillet over medium-high heat and add olive oil. When oil is hot, add garlic, onion, bell pepper, and mushrooms. Cook 3 to 4 minutes.

3. Add squash, zucchini, tomatoes, and 14 cup water. Bring to a boil. Cover. Reduce heat to simmer and cook 10 minutes.

4. Add artichoke hearts, wine, basil, salt-free seasoning, salt, Swiss chard, and remaining 14 cup water. Cover. Cook 5 to 6 minutes longer.

5. Serve ragout over hot fettuccine and top with toasted pine nuts.
