Ingredients

Nonstick cooking spray

2 tsp canola oil

1 lb chicken breasts, boneless, skinned, cut into 12-inch pieces

2 cups chopped onions

2 garlic cloves, minced

2 cups chopped green bell pepper

4 oz chopped smoked turkey

2 (14 12-oz) cans stewed, sliced tomatoes, no salt added

12 (6-oz) can tomato paste, no salt added

2 cups frozen, whole-kernel corn

4 cups water

14 cup flour

12 tsp garlic powder

12 tsp onion powder

12 tsp thyme

Dash red pepper flakes

2 cups frozen, cut okra, thawed

Directions

1. Spray a large saucepan with nonstick cooking spray. Place the saucepan over medium-high heat and add canola oil. When oil is hot, add chicken pieces and cook 4 to 5 minutes.

2. Add onions, garlic, bell pepper, and smoked turkey. Cook 3 to 4 minutes.

3. Add tomatoes, tomato paste, and corn. Mix the water with the flour and add the chili powder, garlic powder, onion powder, thyme, and pepper flakes. Bring to a boil. Cover. Reduce heat to simmer and cook 15 minutes.

4. Add okra and cook 10 more minutes.

Makes 4 servings.
