Ingredients

10 cups salad greens

2 cups fresh spinach leaves

2 cups sliced cucumber

2 cups shredded carrots

12 cup sliced radishes

1 (13 34-oz) can water-packed artichoke hearts, drained, sliced

34 (15-oz) can low-sodium garbanzo beans, drained

12 (15-oz) can low-sodium kidney beans, drained

14 cup thinly sliced red onion

12 small sliced avocado

4 sliced tomatoes

1 12 cups croutons

1 cup (2 recipes) Honey Mustard Vinaigrette Dressing

Directions

1. Divide the salad greens and spinach leaves onto 4 large plates.

2. Add the cucumber, carrots, radishes, artichoke hearts, beans, onion, avocado, tomatoes, and croutons to each plate.

3. Serve the Honey Mustard Vinaigrette Dressing on the side, approximately 4 tbsp for each serving.

This would serve 10 to 12 people.
