Ingredients

2 tbsp olive oil

14 cup red wine vinegar

2 tbsp lemon juice

1 tsp lemon zest

1 tbsp sugar

2 tsp salt-free Mrs. Dash† Lemon Pepper Seasoning Blend

1 (15-oz) can cannellini beans, drained

1 (13 34-oz) can artichoke hearts, water packed, drained and sliced

1 cup sliced mushrooms

1 cup thinly sliced red onion

2 tomatoes, chopped

3 12 cups (17 12 oz) cooked, diced chicken breast

34 cup crumbled feta cheese

12 cup chopped fresh basil

8 cups salad greens

1 cup carrot sticks

Directions

1. In a small bowl, combine olive oil, vinegar, lemon juice, lemon zest, sugar, and salt-free seasoning to make the dressing. Mix well. Set aside.

2. In a large bowl, combine cannellini beans, artichoke hearts, mushrooms, onion, tomatoes, and chicken pieces. Mix well.

3. Add prepared dressing, cheese, and basil to the chicken mixture. Toss to mix well.

4. Place 2 cups salad greens on 4 dinner plates and top with chicken salad. Add carrots sticks on the side.
