Ingredients

8 oz dry bowtie pasta, cooked according to directions without salt or fat

4 oz fresh mozzarella cheese, cut into small pieces

1 tbsp olive oil

4 minced garlic cloves

1 tsp lemon zest

2 tbsp lemon juice

2 tsp salt-free Mrs. Dash† Lemon Pepper Seasoning Blend

12 tsp salt

12 tsp crushed red pepper

1 cup chopped fresh basil leaves

4 sliced Roma tomatoes

2 cups chicken breast, cooked, diced

8 cups salad greens

14 cup Parmesan cheese

Directions

1. In a large bowl combine the mozzarella cheese, olive oil, garlic, lemon zest, lemon juice, salt-free seasoning, salt, pepper, basil, and tomatoes. Let stand at room temperature for 20 minutes.

2. Add the pasta and chicken to the mozzarella cheese mixture. Mix well.

3. Divide the salad greens on 4 large plates and top with pasta salad. Sprinkle with Parmesan cheese.
