Ingredients

1 (12-oz) can evaporated skim milk

3 tbsp flour

1 tsp onion powder

1 tsp garlic powder

1 tsp oregano

1 tsp basil

1 tsp salt-free Mrs. Dash† Original Blend seasoning

12 tsp salt

Nonstick cooking spray

2 tsp canola oil

1 lb chicken breasts, boneless, skinless, cut into 1-inch pieces

1 (14 12-oz) can diced tomatoes, no salt added

1 (13 34-oz) can water packed artichoke hearts, drained and sliced

6 oz whole-wheat penne pasta, cooked according to directions without salt or fat

2 tbsp chopped fresh parsley

Directions

Preheat oven 375°F.

1. In a medium-size bowl, combine milk, flour, onion powder, garlic powder, oregano, basil, salt-free seasoning, and salt. Mix well and set aside.

2. Spray a large skillet with nonstick cooking spray. Place the skillet over medium-high heat and add canola oil. When oil is hot, add chicken pieces. Cook 4 to 5 minutes or until cooked through.

3. Add tomatoes, artichoke hearts, and prepared milk mixture to the skillet. Stir 2 to 3 minutes until thickened.

4. In a large bowl, combine cooked pasta and chicken mixture. Spray a medium-size baking dish with nonstick cooking spray. Transfer the pasta and chicken mixture to the dish.

5. Bake 25 minutes and top with parsley.
