Ingredients

Recipe for Wild Rice Salad

2 tbsp olive oil

3 tbsp balsamic vinegar

1 tsp oregano

1 tsp basil

1 tsp salt-free Mrs. Dash† Lemon Pepper Seasoning Blend

1 tbsp lemon juice

2 tsp sugar

1 12 lb chicken breasts, boneless, skinned, cut into 1-inch pieces

Nonstick cooking spray

16 large cherry tomatoes

3 cups button mushrooms, stems removed

1 cup onion, cut into 1 12-inch slices

Eight 10-inch or 12-inch skewers

Directions

1. Prepare Wild Rice Salad recipe according to directions.

2. In a large bowl combine olive oil, balsamic vinegar, oregano, basil, salt-free seasoning, lemon juice, and sugar.

3. Add chicken pieces and mix well. Let sit for 5 minutes.

4. Spray a broiler pan with nonstick cooking spray. Set aside.

5. Stir tomatoes, mushrooms, and onion in with the chicken pieces to coat with the olive oil mixture.

6. Alternate chicken, mushrooms, tomatoes, and onion on eight skewers.

7. Place skewers on the broiler pan and brush any remaining olive oil mixture on top of kabobs.

8. Broil 5 to 6 inches from the heat source for 5 minutes on each side, turning once. Serve with wild rice salad.
