Ingredients

112 lbs chicken breast tenderloins, cut into thin 12-inch strips

1 onion, sliced thin

2 red, orange, or yellow bell peppers, cut into 12-inch slices

14 tsp garlic powder

2 TBS olive oil

12 tsp salt

12 tsp pepper

8 6-inch unsalted corn tortillas

1 cup reduced-fat cheddar cheese, shredded

1 avocado, cut into 12-inch cubes

12 cup sour cream, reduced fat

Directions

1. Add 1 TBS oil to large skillet over medium-high heat. Season chicken breast strips with salt and pepper. Once oil is hot, add chicken to pan and sauté until golden brown on both sides. Do not overcrowd pan—work in batches to ensure the meat browns evenly instead of steaming.

2. Once all the chicken has been cooked, set it aside on plate or pan. Turn down heat to medium and add 1 TBS olive oil back into already-warm pan. Once the oil has heated up, add sliced onion to pan and stir until softened and beginning to caramelize, about 5-10 minutes. Add pepper slices, 14 tsp salt, 14 tsp pepper, and garlic powder, and sauté vegetable mixture for another 5-10 minutes until peppers have softened and begun to caramelize.

3. Serve chicken and peppers in whole-wheat tortillas, topped with cheese, avocado chunks, and sour cream.
