Ingredients

2 recipes for Balsamic Vinaigrette Dressing

5 cups salad greens

5 cups fresh spinach leaves

1 cup shredded carrots

4 cups sliced cucumber

2 cups cooked diced chicken breast

1 cup mandarin oranges, drained

12 cup dried cranberries

1 apple, thinly sliced

12 cup thinly sliced red onion

12 cup crumbled feta cheese

12 cup slivered, blanched almonds

Directions

1. Prepare Balsamic Vinaigrette Dressing according to recipe directions. Set aside.

2. Divide the salad greens, spinach leaves, carrots, and cucumber among 4 large dinner plates. Top each plate equally with chicken, oranges, cranberries, apple, onion, cheese, and almonds.
