Ingredients

Nonstick cooking spray

1 tbsp olive oil

4 minced garlic cloves

12 cup chopped onion

12 cup chopped red bell pepper

12 cup chopped green bell pepper

2 (14 12-oz) cans Italian stewed tomatoes

1 12 tsp oregano

1 tsp salt-free Mrs. Dash† Original Blend Seasoning

14 tsp garlic powder

1 tsp onion powder

1 12 lb cod fillets, cut into 4 pieces

1 tbsp cornstarch

2 tbsp water

1 cup quinoa, cooked according to directions without salt or fat

Directions

1. Spray a large skillet with nonstick cooking spray. Place the skillet over medium-high heat and add olive oil. When hot, add garlic and onion. Sauté for 1 to 2 minutes.

2. Add peppers and sauté for 2 to 3 minutes.

3. Add stewed tomatoes, oregano, salt-free seasoning, garlic, and onion powder. Place the cod fillets in the center of the skillet and cover with some of the sauce.

4. Cover and reduce heat to simmer. Cook for 4 to 5 minutes. Turn fillets over and cook for another 4 to 5 minutes or until fish flakes easily with a fork.

5. Mix the cornstarch with the water and add to the skillet. Stir and cook 2 to 3 minutes until thickened.

6. Serve cod fillets with sauce over hot quinoa.
