Ingredients

34 cup low-fat sour cream

12 tsp basil

12 tsp oregano

12 tsp salt

Nonstick cooking spray

2 tsp olive oil, divided

1 lb chicken breasts, boneless, skinned, cut into 1-inch pieces

2 minced garlic cloves

4 sliced green onions, tops included

1 cup mushrooms

1 cup carrots, cut in thin strips

2 cups broccoli florets, sliced in half

12 cup water

8 oz bowtie pasta, cooked according to directions without salt or fat

14 cup Parmesan cheese

Directions

1. In a small bowl combine the sour cream, basil, oregano, and salt. Set aside.

2. Spray a large skillet with nonstick cooking spray. Place the skillet over medium-high heat and add 1 tsp olive oil. When hot, add chicken pieces and cook 4 to 5 minutes or until cooked through.

3. Transfer chicken pieces to a plate. Set aside.

4. Add the remaining 1 tsp olive oil, garlic, and onions to the skillet. Sauté for 1 to 2 minutes.

5. Add the mushrooms and sauté for 2 minutes.

6. Add the carrots, broccoli, and water. Cover. Cook 3 to 4 minutes or until vegetables are tender.

7. Add the sour cream mixture, cooked chicken, and cooked pasta. Mix well and stir for 2 to 3 minutes to heat through.

8. Top with cheese.

Makes 4 servings.
