Ingredients

1 lb turkey breast tenderloin, cut into thin 2-inch strips

2 tsp flour

Nonstick cooking spray

1 tbsp olive oil, divided

12 cup chopped onion

3 cups sliced mushrooms

1 cup low-sodium chicken broth

1 (6-oz) can tomato paste, no salt added

12 tsp salt

34 cup low-fat sour cream

8 oz wide-noodle whole-wheat pasta, cooked according to directions without salt or fat

Directions

1. In a large bowl, combine turkey strips and flour. Toss to coat evenly. Set aside.

2. Spray a large skillet with nonstick cooking spray. Place the skillet over medium-high heat and add 12 tbsp olive oil. When oil is hot, add turkey and cook 5 to 6 minutes or until cooked through. Remove from skillet. Set aside and keep warm.

3. Add remaining 12 tbsp olive oil to the skillet. When oil is hot, add onion and sauté 1 minute.

4. Add mushrooms and sauté 2 minutes.

5. Add broth, tomato paste, and salt. Mix well.

6. Add sour cream and cooked turkey to the skillet. Stir and cook 2 to 3 minutes to heat through. Serve over hot pasta.
