Ingredients

Nonstick cooking spray

1 tsp olive oil

12 cup chopped onion

1 cup sliced mushrooms

12 cup chopped red bell pepper

One 10-oz package frozen, chopped spinach, thawed and drained

1 12 cups 1% or nonfat milk

2 cups egg substitute

34 cup Bisquick† Heart Smart† Pancake and Baking Mix

1 tsp salt-free Mrs. Dash† Lemon Pepper Seasoning

One (6-oz) can salmon, without salt, drained and flaked

14 cup Parmesan cheese

14 cup shredded, low-fat mozzarella cheese

Directions

Preheat oven to 350°F.

1. Spray a deep-dish pie pan or medium-size baking dish with nonstick cooking spray. Set aside.

2. Spray a large skillet with nonstick cooking spray. Place the skillet over medium-high heat and add olive oil. When hot, add onion, mushrooms, and bell pepper. Sauté for 2 to 3 minutes. Remove from heat.

3. Transfer mixture to a large bowl and add spinach, milk, egg substitute, Bisquick, and salt-free seasoning. Mix well and gently stir in salmon. Pour into prepared baking dish.

4. Top with Parmesan cheese and bake 30 minutes. Add the mozzarella cheese on top and bake 5 to 10 more minutes. Let sit 5 minutes before serving.
