Ingredients

1 cup couscous, cooked according to directions without salt or fat

12 cup low-fat sour cream

14 cup low-fat mayonnaise

1 tsp sugar

1 tsp curry powder

12 tsp cumin

14 tsp salt

14 cup raisins

8 dried apricots, chopped

1 apple, chopped

6 green onions, sliced, tops included

12 cup chopped red bell pepper

12 (15-oz) can low-sodium garbanzo beans, drained

2 cups (10 oz) cooked, diced chicken breast

8 cups salad greens

12 cup dry-roasted peanuts, unsalted

12 cup carrot sticks

Directions

1. Cook couscous and set aside to cool to room temperature.

2. In a small bowl, combine sour cream, mayonnaise, sugar, curry powder, cumin, and salt. Mix well. Set aside.

3. In a large bowl, combine raisins, dried apricots, apple, onions, bell pepper, garbanzo beans, and chicken pieces.

4. Add cooked couscous and sour cream mixture to the chicken mixture. Mix well.

5. Place 2 cups salad greens on 4 dinner plates and top with couscous salad. Sprinkle with peanuts and add carrot sticks on the side.

Makes 4 servings.
