Ingredients

Recipe for Oven-Roasted Potatoes

4 tbsp Dijon mustard

14 cup low-fat sour cream

14 cup low-sodium chicken broth

2 tsp sugar

Nonstick cooking spray

2 tsp canola oil

1 lb turkey breast cutlets

4 chopped green onions

Directions

1. Prepare Oven-Roasted Potatoes recipe according to directions.

2. Meanwhile, over medium heat, in a small saucepan combine the mustard, sour cream, chicken broth, and sugar. Stir for 1 to 2 minutes to heat through. Remove saucepan from heat. Set aside.

3. Spray a large skillet with nonstick cooking spray. Place the skillet over medium-high heat and add canola oil. When hot, add turkey cutlets. Cook 5 minutes on each side until lightly browned and cooked through.

4. Heat mustard sauce for 1 to 2 more minutes.

5. Serve turkey cutlets with Oven-Roasted Potatoes. Spoon sauce over cutlets and top with onions.

Makes 4 servings.
