Ingredients

4 cups or 1 recipe of Marinara Sauce

Nonstick cooking spray

2 tsp olive oil

4 minced garlic cloves

12 onion, diced

1 cup sliced mushrooms

3 cups frozen burger-style vegetable protein crumbles, thawed

8 oz whole-wheat spaghetti pasta, cooked according to directions without salt or fat

14 cup Parmesan cheese

Directions

1. Prepare Marinara Sauce recipe according to directions. Set aside.

2. Spray a large skillet with nonstick spray. Place the skillet over medium-high heat and add olive oil. When hot, add garlic and onions and sauté for 2 minutes.

3. Add mushrooms and sauté for 3 minutes.

4. Add vegetable protein crumbles and marinara sauce. Stir and cook 4 to 5 minutes to heat through.

5. Serve over hot pasta.

6. Top each serving with cheese.

Makes 4 servings.
