Ingredients

Nonstick cooking spray

2 tsp olive oil

14 cup chopped onion

14 cup chopped red bell pepper

1 cup sliced mushrooms

12 cup green beans, cut into 1-inch lengths

12 cup thinly sliced carrots

1 cup chopped zucchini

1 cup red potatoes, cut into 12-inch pieces

1 (14 12-oz) can tomatoes, diced, no salt added

1 cup water

12 tsp onion powder

12 tsp basil

12 tsp salt-free Mrs. Dash† Original Blend Seasoning

Directions

1. Spray a large saucepan with nonstick cooking spray. Place the saucepan over medium-high heat and add olive oil. When hot, add onion and pepper and sauté for 1 to 2 minutes.

2. Add mushrooms, green beans, carrots, zucchini, potatoes, tomatoes, water, onion powder, basil, and salt-free seasoning.

3. Bring to a boil. Cover. Reduce heat to simmer and cook for 20 minutes.
