1. Bring pot of water to boil.
2. Add couscous, stir, remove pot from heat, cover, and let sit for 5 minutes. After 5 minutes, remove lid and fluff couscous with fork.
3. Add oil, salt, pepper, Greek seasoning, and stir to combine.
4. Let couscous cool for about 10 minutes. Once cooled, add onion, tomatoes, cucumber, olives, peppers, and cheese. Stir to combine. Serve chilled or at room temperature.
