Ingredients

2 cups water

112 cups dry couscous

14 cup chopped red onion

34 cup halved grape tomatoes

34 cup chopped cucumber

12 tsp Greek seasoning

12 tsp salt

14 tsp pepper

1 TBS olive oil

14 cup chopped kalamata olives (pits removed)

12 cup jarred roasted red peppers, drained and chopped

12 cup fat-free feta crumbles

Directions

1. Bring pot of water to boil.

2. Add couscous, stir, remove pot from heat, cover, and let sit for 5 minutes. After 5 minutes, remove lid and fluff couscous with fork.

3. Add oil, salt, pepper, Greek seasoning, and stir to combine.

4. Let couscous cool for about 10 minutes. Once cooled, add onion, tomatoes, cucumber, olives, peppers, and cheese. Stir to combine. Serve chilled or at room temperature.
