Ingredients

12 cup low-fat sour cream

14 cup low-fat mayonnaise

12 cup minced red onion

14 cup canned diced green chilies

1 tbsp lemon juice

1 lb halibut fillets

Nonstick cooking spray

1 tomato, chopped

2 tbsp chopped fresh cilantro

1 cup brown rice, cooked according to directions without salt or fat

Directions

Preheat oven to 350°F.

1. In a small bowl, combine sour cream, mayonnaise, onion, chilies, and lemon juice. Mix well. Set aside.

2. Spray a baking dish with nonstick cooking spray. Place the halibut fillets in the dish.

3. Spoon sour cream mixture over fillets. Bake uncovered for 30 to 35 minutes or until fish flakes easily with a fork.

4. Top fillets with tomato and cilantro. Serve with hot rice.

Makes 4 servings.
