Ingredients

2 tsp olive oil

3 tbsp lemon juice, divided

1 tsp lemon zest, divided

12 tsp salt-free Mrs. Dash† Lemon Pepper Seasoning Blend

1 lb (four 4-oz) chicken breasts, boneless, skinless

5 tbsp low-fat mayonnaise

2 tbsp chopped fresh parsley

1 cup quinoa, cooked according to directions without salt or fat

Directions

1. In a medium-size shallow glass dish, combine the olive oil, 2 tbsp lemon juice, 12 tsp lemon zest, and salt-free seasoning.

2. Add chicken breasts to marinade. Cover and refrigerate for 20 minutes. Turn occasionally.

3. In a small bowl, combine mayonnaise, parsley, remaining 1 tbsp lemon juice, and 12 tsp lemon zest. Mix well. Set aside.

4. Spray a broiler pan with nonstick cooking spray. Place chicken on the pan. Grill or broil chicken 4 to 5 inches from the heat source for 5 to 10 minutes on each side until browned and cooked through.

5. Top chicken with lemon-parsley sauce and serve with hot quinoa.
