Ingredients

34 cup white cooking wine

2 tbsp olive oil

1 tbsp grated fresh ginger

2 minced garlic cloves

8 minced green onions, divided

1 lb (four 4-oz) chicken breasts, boneless, skinned

12 cup water

34 cup low-sodium chicken broth

1 14 cup couscous, uncooked

1 oz (14 cup) slivered almonds

Directions

1. In a large bowl combine the wine, olive oil, ginger, garlic, and half the green onions.

2. Add chicken breasts and marinate for 30 minutes, covered in the refrigerator. Turn occasionally.

3. Grill or broil chicken 5 to 10 minutes on each side until browned on the outside and cooked in the center.

4. Meanwhile, in a small saucepan bring the water and chicken broth to a boil. Stir in couscous. Remove from heat. Cover and set aside for 5 minutes.

4. Fluff and stir couscous with a fork and top with almonds.

5. Top chicken with remaining onions and serve with hot couscous.

Makes 4 servings.
