Ingredients

Nonstick cooking spray

1 tbsp olive oil, divided

1 lb chicken breasts, boneless, skinned, cut into 1-inch pieces

4 garlic cloves, minced

6 green onions, sliced, tops included

1 tbsp grated fresh ginger

2 12 tbsp honey

1 tbsp water

2 tbsp lime juice

1 tsp cornstarch

12 tsp salt-free Mrs. Dash† Lemon Pepper Seasoning Blend

2 tomatoes, chopped

1 cup sliced mango

12 cup chopped fresh cilantro

1 14 cups brown rice, cooked according to directions without salt or fat

Directions

1. Spray a large skillet with nonstick cooking spray. Place the skillet over medium-high heat and add 12 tbsp olive oil. When oil is hot, add chicken pieces and cook 4 to 5 minutes until cooked through. Remove from skillet. Set aside and keep warm.

2. Add remaining 12 tbsp olive oil to the skillet along with the garlic, onions, and ginger. Stir-fry 1 minute.

3. In a small bowl, combine the honey, water, lime juice, cornstarch, and salt-free seasoning. Add to the skillet with the cooked chicken pieces.

4. Add tomatoes, mango pieces, and 14 cup cilantro. Stir and cook 1 to 2 minutes to heat through.

5. Serve over hot brown rice and top each serving with remaining cilantro.
