Ingredients

Nonstick cooking spray

6 oz chopped smoked turkey

4 garlic cloves, minced

1 12 cups chopped onions

1 12 cups chopped green bell pepper

3 cups frozen black-eyed peas, thawed

14 tsp red pepper flakes

1 cup uncooked long-grain white rice

1 cup reduced-sodium chicken broth

1 cup water

Directions

1. Spray a large skillet with nonstick cooking spray. Place the skillet over medium-high heat and add the smoked turkey, garlic, onions, and bell pepper. Cook 5 to 6 minutes.

2. Add peas, pepper flakes, uncooked rice, broth, and water. Bring to a boil. Cover. Reduce heat to simmer and cook 20 to 25 minutes.

Makes 4 servings.
