Ingredients

Recipe for Seasoned Mashed Potatoes

13 cup seasoned bread crumbs

14 cup Parmesan cheese

12 tsp salt-free Mrs. Dash† Lemon Pepper Seasoning Blend

1 tbsp olive oil

1 tbsp lemon juice

1 tsp lemon zest

1 tsp sugar

1 lb (four 4-oz) chicken breasts, boneless, skinned

Nonstick cooking spray

14 cup chopped fresh parsley

1 lemon, cut into 8 wedges

Directions

Preheat oven to 375°F.

1. Prepare Seasoned Mashed Potatoes recipe according to directions.

2. Meanwhile, in a shallow bowl, combine the bread crumbs, cheese, and salt-free seasoning. Set aside.

3. In another shallow bowl, combine the olive oil, lemon juice, lemon zest, and sugar. Set aside.

4. Dip chicken breasts in the olive oil mixture and then press in the bread crumb mixture.

5. Spray a medium-size baking dish with nonstick cooking spray. Place the chicken in the dish.

6. Lightly spray the top of each chicken breast with cooking spray and pour any extra olive oil mixture over the top.

7. Bake for 30 to 35 minutes.

8. Top chicken breasts with parsley and serve with lemon wedges and seasoned mashed potatoes.
