Ingredients

12 cup (2 oz) slivered blanched almonds

1 lb (four 4-oz) chicken breasts, boneless, skinless

Nonstick cooking spray

2 tbsp olive oil, divided

4 garlic cloves, minced

6 green onions, sliced, tops included

14 cup lemon juice

12 tsp salt-free Mrs. Dash† Lemon Pepper Seasoning Blend

12 tsp salt

12 cup chopped fresh parsley

1 cup brown rice, cooked according to directions without salt or fat

Directions

1. In a small skillet, over medium-low heat, add almonds. Stir 4 to 6 minutes until lightly toasted. Remove from heat and set aside.

2. Place chicken between clean plastic wrap on a cutting board. With a mallet or the back of a large spoon, pound chicken breasts until they are 12-inch thick. Set aside.

3. Spray a large skillet with nonstick cooking spray. Place the skillet over medium-high heat and add 1 tbsp olive oil. When oil is hot, add chicken and cook 5 to 6 minutes on each side or until cooked through. Transfer chicken from skillet to a plate. Set aside and keep warm.

4. Add remaining 1 tbsp olive oil. When oil is hot, add garlic and onions. Sauté 1 to 2 minutes.

5. Add lemon juice, salt-free seasoning, salt, and parsley. Stir 1 minute to heat through.

6. To serve, spoon mixture over chicken and serve with hot rice and almonds.
