Ingredients

34 cup uncooked lentils

1 34 cup water

12 cup chopped onion

12 cup chopped celery

3 cups sliced mushrooms, divided

13 cup chopped walnuts

2 slices whole-wheat bread, cut into small pieces to make bread crumbs

12 tsp poultry seasoning

34 tsp salt-free Mrs. Dash† Original Blend seasoning, divided

34 tsp salt, divided

12 cup egg substitute

Nonstick cooking spray

2 tsp olive oil

34 cup nonfat or 1% milk

1 tbsp flour

1 cup brown rice, cooked according to directions without salt or fat

2 tbsp chopped fresh parsley

Directions

Preheat oven to 350°F.

1. In a small saucepan, combine lentils and water and bring to a boil. Cover. Reduce heat to low and cook 25 minutes or until lentils are soft.

2. In a large bowl, combine the onion, celery, 2 cups mushrooms, walnuts, bread crumbs, poultry seasoning, 38 tsp, 38 tsp salt-free seasoning, salt, and egg substitute. Mix well.

3. Add lentils and transfer mixture to a medium-size loaf pan that has been sprayed with nonstick cooking spray. Press mixture into a loaf shape. Bake for 30 to 35 minutes. Let stand 5 minutes.

4. Spray a small skillet with nonstick cooking spray. Place the skillet over medium-high heat and add olive oil. When oil is hot, add remaining 1 cup mushrooms and cook 1 to 2 minutes.

5. Mix milk and flour in a small bowl and add to skillet.

6. Add remaining 38 tsp salt-free seasoning and 38 tsp salt. Stir with a wire whisk and cook 1 to 2 minutes until thickened.

7. Cut loaf into 4 servings and spoon mushroom sauce over the top. Serve with hot brown rice and top with parsley.
