1. Spray a large saucepan with nonstick cooking spray. Place the saucepan over medium-high heat and add olive oil. When hot, add garlic, onion, celery, and pepper and sauté for 2 to 3 minutes.
2. Add carrots, water, lentils, tomato sauce, onion powder, oregano, and salt-free seasoning.
3. Bring to a boil. Cover. Reduce heat to simmer and cook for 25 minutes.
4. Add spinach and cook 5 more minutes or until lentils are soft.
