Ingredients

1 cup low-fat vanilla yogurt

2 tsp lemon juice

12 tsp lemon zest

2 tbsp honey

5 cups cantaloupe, cut into 34-inch pieces

5 kiwi fruits, peeled, cut into 34-inch pieces

1 12 cups sliced mango

14 cup fresh mint leaves

Directions

1. In a small bowl, combine yogurt, lemon juice, lemon zest, and honey. Mix well. Set aside.

2. Layer 6 parfait glasses or dessert cups with cantaloupe, kiwi, and mango.

3. Spoon yogurt mixture over fruit.

4. To serve, garnish each parfait with mint leaves.

Makes 6 servings.
