Ingredients

Nonstick cooking spray

1 12 lb cod fillets

2 tbsp lemon juice

12 tsp salt-free Mrs. Dash† Lemon Pepper Seasoning Blend

1 tbsp oregano

12 tsp thyme

2 tomatoes, chopped

14 cup sliced black olives

12 cup chopped fresh parsley, divided

12 cup crumbled feta cheese

1 slice whole-wheat bread cut into small pieces to make bread crumbs

13 cup Parmesan cheese

8 oz whole-wheat linguine pasta, cooked according to directions without salt or fat

Directions

Preheat oven to 400°F.

1. Spray a 9 x 13 baking dish with nonstick cooking spray. Pace cod fillets in the dish.

2. Pour lemon juice over fillets. Top evenly with salt-free seasoning, oregano, thyme, tomatoes, olives, 14 cup parsley, feta cheese, bread crumbs, and Parmesan cheese.

3. Bake 20 to 22 minutes or until cod flakes easily with a fork.

4. Serve with hot pasta and top with remaining 14 cup parsley.
