Ingredients

2 cups frozen burger-style vegetable protein crumbles, thawed

34 cup walnuts, finely chopped

1 cup minced onion

12 cup minced celery

14 cup dry quick oats

1 tsp onion powder

12 tsp garlic powder

1 tsp salt-free Mrs. Dash† Original Blend seasoning

1 tsp poultry seasoning

3 slices whole-wheat bread cut into small pieces to make bread crumbs

34 cup egg substitute

14 tsp salt

Nonstick cooking spray

3 tbsp tomato ketchup

1 tbsp brown sugar

2 tbsp chopped fresh parsley

34 cup brown rice, cooked according to directions without salt or fat

Directions

Preheat oven to 350°F.

1. In a large bowl, combine vegetable protein crumbles, walnuts, onion, celery, oats, onion powder, garlic powder, salt-free seasoning, poultry seasoning, bread crumbs, egg substitute, and salt. Mix well. Set aside.

2. Spray 8 cups in a muffin pan with nonstick cooking spray.

3. Fill muffin cups with mixture and press down to form rounded loaves. Set aside.

4. In a small bowl, combine tomato ketchup with sugar. Mix well. Evenly spread the mixture on the top of the loaves.

5. Bake 35 to 40 minutes. Top with parsley and serve with hot rice.
